Quick Bites for Busy Days: My Protein Pancake Test Drive
As a girl in her 20s, working two jobs and managing school, cooking three meals a day is close to impossible. Finding ways to make mealtime quicker and easier by planning ahead helps me maintain a healthy diet and save money by eating at home!
Viral For A Reason
Breakfast is my favorite meal of the day, but I don’t always have the time to cook like I wish I did. Recently I have been seeing a variety of recipes using greek yogurt or cottage cheese to make “protein” pancakes, muffins, or bagels on my Tik Tok feed and decided why not give one try.
The four ingredient recipe I went with for my pancakes consisted of all items I already had – greek yogurt, eggs, oatmeal, and cinnamon.
How It Went
First thing I learned was that I need to work on my pancake flipping skills… Otherwise, these pancakes turned out to be pretty dense and fell apart pretty easily. After adding peanut butter and honey as toppings, they were pretty yummy and filling.
The recipe made six pancakes, half of which I put in the fridge for another day.
For Next Time
I would make this recipe again, but I might…
- Add some berries on top
- Add vanilla to the batter to help cover up the strong yogurt taste
- Stick to smaller pancakes – easier to flip and won’t fall apart as much
These pancakes were by no means aesthetically pleasing to look at, but they did the job and were simple. With a few tweaks this is a solid, filling recipe to make in a larger batch and keep on hand in the freezer or fridge for days ahead!
